I'm trying to create a sous vide box using a cooler and water heater element. My question is since I'll only be using 120v should I use this 8" 1500w 120v element

http://www.amazon.com/gp/product/B000KKVZUO/ref=ox_sc_act_title_1?ie=UTF8&psc=1&smid=ATVPDKIKX0DER

or this 14" ripple 5500w 240v element
http://www.amazon.com/Camco-02963-Screw-In-Ripple-Element/dp/B000BPG4LI/ref=sr_1_2?s=hi&ie=UTF8&qid=1370618933&sr=1-2&keywords=camco+240v+low

I realize the actual wattage for the second element would be around 1/4 so maybe 1200w but would the increased surface area of the larger 240v element allow the water to come up to temp quicker? Any help would be appreciated.

I would keep it simple with the 120v element and just plan ahead when you want to cook with it, with 120v you can use it anywhere. Since you will be using a temp controller and a pump to recirculate the water you can turn it on the night before if you have to and it will maintain the temp until you are ready.

I use my MT and have it set on a timer so it turns on a few hours ahead of time.

So is this a consensus or does anyone disagree? Thanks for chiming in guys.
