I recently got a big order from NB and impulsively threw in a little bottle of "Old Fashioned Ginger Ale Extract." Says the full bottle makes 4 gallons. I want to keg a five gallon batch of it for the holidays.
It calls for 2 cups of sugar per gallon- I'm planning on doing 5 cups of brown sugar and 6 lbs of water-white clover honey. I was thinking I could get the requisite ginger for five gallons (since the extract is only enough for 4 gallons, and I want this "gingery") but dicing up a couple of ginger roots and steeping them in the mixture prior to kegging.
Anybody have any input on this idea, particularly as far as how much ginger to use?
