I just brewed an IPA I am going to submit to a BJCP contest. The bottles are due in exactly 17 days. They will sit another two weeks before they are judged which is a month from now. The beer is basically a Blind Pig clone and the OG came in at 1.063.

My question is should I rush the dry hopping and bottle condition this beer hoping it will age some more in the two weeks before the contest. Or should I just force carb and bottle off the keg? If I do this does the beer still age like a bottle conditioned beer would?
