Hi,

I will add POM pomegranate juice that has been flash pasteurized to my secondary fermenter.

Do I need to prep the juice at all, such as using campden tablets, or can I just add the juice as is?

Should I try to sanitize the lid of the juice container before pouring in?

Please let me know any specific steps I should take. I've seen some discussion about this, but the answers were not so clear or a bit conflicting.

Thank you!

As-is.
The purpose of pre-fermentation sulfite is to inhibit wild microbes, but pasteurized juice has no wild microbes.

To be safe, yes. Dunk the top of the container in sanitizer before you open it. This is probably not necessary though, so whatever.

Happy to answer any further questions.
