What will the impact be on adding honey at 5 minutes versus flame out?
 
Either way most of the flavor and aroma will be fermented out in primary so your mostly just getting a few extra gravity points. If you want to retain some of the awesome qualities of honey I would add it to your secondary or after primary fermentation.
 
Both will destroy the delicate aromatics offered by the honey.

Unless it contains dead bees, dirt, or pieces of honeycomb, sugary honey should already be sanitary. Pitch slightly warmed honey (for better viscosity) at high krausen in the primary. At high krausen, the yeast will already be in 5th gear chewing on all of the maltose and maltriose. The addition of honey will kick them into 6th gear.
