I hadn't fermented anything in a while, so I had the itch. Went to Whole Foods and bought 2 gallons of Mrs Gooch's whole cider. Doesn't say whether it's pasteurized, but I assume it is. Took the jugs home, opened the caps for a few minutes, reasealed and shook the crap out of them. Did this daily 3 more times, then put airlocks in them. After a couple more days I tossed a small pinch of Nottingham in each. Fermentation took off. My place is at ~82°F.
Fast forward to 13 days in and I tried some. Just poured out of the jug. It tastes pretty good. Still a bit yeasty. Slightly sour. Far less fusel taste than I expected. I was half expecting to just use these for vinegar, it now I'm going to age one for a year and the other until it drops clear. No SG reading. Playing this by ear.
