Is there a way to determine alcohol content without knowing the pH prior to fermentation? I only ask because the cider I'm now enjoying seems to have a bit more kick that I generally get and am just curious.

I would imagine that you're talking about not knowing the SG when you know the FG. Yes, you can estimate the SG if you know the fermentable content of the recipe.
 
ha ha...yea...SG is what I meant... my thought process was clouded by work. I hate when that happens.
