Looking for a new kettle (60qt alum). Is $20 bucks worth the difference for 3 gauge over 7 gauge. I don't remember what my 40qt is and this is an online purchase so I can't compare the two up close and personal.
 
Where are you looking? Most places I've seen give metric numbers. Are you buying for 10G batches? If so I'd recommend going with an 80qt I do 10G batches in my 60 and its really full and boilovers are always threatening. That being said I have a paper thin AL pot that I've been using with no problems, so either thickness should work nicely.
 
Quick google search yielded this in short, 7 gauge is 3/16 (.1875) of an inch, 3 gauge is 1/4 (.25) of an inch.

I'd personally go with the heavier pot - but you'll do fine with the thinner pot.
