I'm seeking advice after the fact, actually. Yesterday, I racked one gallon of muscadine wine for the first time. I crushed one campden tablet and added it about halfway thru the racking process. The wine tasted very dry as expected. I didn't check the hydrometer reading, but it was at .995 after one week in secondary fermentation. After racking yesterday, I topped it off with about a cup of commercial muscadine wine.

Anything else I should have done...or should do now?

I'd let it age, if you plan on back sweetening after it ages, there are a few things that you will need to do, such as stabilizing with meta or campden and adding sorbate to stop any further fermentation.

I'll probably rack at least 2 more times, stabilize and back sweeten. Sounds like I'm headed in the right direction. Thx.
