After much deliberation and thought, I'll be jumping into all grain with a one gallon kit. I live in a small apartment, so the size is appealing (wife would not be to happy having to reach around 55 beers for the milk). Cutting the ingredients down is simple math, but does the yeast fall into that category? Only found one post on here from 2 1/2 years ago, but no real answers.
 
If you use a pitching rate calculator like Mr. Malty, it will show how much viable yeast you need to get good fermentation. In the case of a 1 gallon batch, you'll probably be looking at pitching about 1/2 vial or packet.
 
Nice double post. Depending on the style and the OG, you're looking at 1/2 to 1 vial or dry packet. One and done.
