Mineral loss from mash to kettle? Mash and kettle additions?

Hey all, I have some questions and concerns about my water chemistry and/or water treatment process, and I haven't been able to find any solid answers via search. Anyway... I currently treat my relatively soft, relatively alkaline water with salts and lactic acid in the mash. I treat my sparge...

Comments on water profile for hoppy red ale

After years of saying that I wanted to make my own beer I have finally started! I first made two extract batches then moved on to BIAB (5 gallon batches). So far I have made a tripel and a belgian dark strong ale with the BIAB method. I feel like I have the process pretty well sorted with proper...

    Bottled vs. Tap Water

I just put my 4th brew into primary (amped up Hoegaarden clone ~6%abv), when I realized that it might be time to reevaluate using bottled vs. tap water. I live in Berkeley CA where the water is, frankly, delicious. Beats the hell out of southern california water. I don't think it is hard...

    Mash pH questions.

My water is very soft. Ca - 6ppm, Mg - < 1ppm, Na - 7ppm, SO4 - 3ppm, Cl - 4ppm, HCO3 - 12ppm. I've been adding CaCl and MgSO4 to my mashes lately to try and bring up my Ca and Mg levels. I use EZWater to determine the amounts I want. My question revolves around measuring my mash pH and...

    Water to grain ratio

I'm sure this has been discussed elsewhere in the forum and if so please direct me there. But I have a question about what to set my water to grain ratio for mashing at? I know there is science behind it and will affect the amount of fermentable sugars available, but I'm confused on picking a...

    San Diego, CA Water Profile

Hello, I have noticed quite a few brewers in the San Diego area. Does anyone have a water profile handy for San Diego? The last one available online seems to be from 2008 and does not give Calcium or Magnesium or Bicarbonate... Thanks! Scott
