P can you explain the above toggling sys.cfg files? I.e how do you create the file specific to brewing and another for fermenting? what screen are these files created?

Well I think I will use something like these spdp switches, one for each output. for the inputs I think I will just get another set of xlr inputs and have only 1 connected at a time.

you are correct if you want to switch both legs of your 4 elements you would need 1 ssr each (4 for the elements) and an additional to switch 1 leg each on 2 pumps for a total of 5 dual ssr's.
If you switch both legs of the elements it is arguable that you dont need contactors...
