    Recipe Suggestion: Calypso, Mosaic, Simcoe

Ok, I need to get a batch going. I'm looking for suggestions for a recipe for a good summer beer. I picked up Calypso and Mosaic to try a little while back. I've also got some Simcoe and an experimental variety that's like Amarillo (EXP1210). I've got a nut brown and Citra/Amarillo IPA on...

    Tart of Darkness

You should be fine. The bugs in Roselaer are pretty alcohol tolerant. But, I suspect it will be incredibly sour since there is so much more sugar for the bugs to chew on. Make sure you give it 9-12 months minimum. Let us know how it turns out! Jaz

    Tart of Darkness

I brewed the ToD clone from Morebeer in Jan 2013. Fermented with Roselaer. 4 weeks in primary and then racked to secondary until the first week of Jan 2014. I skipped the oak step as I'm not a huge fan of oak. Bottled with corn sugar and a small amount of dry champagne yeast and conditioned...

Anyone else waiting for resultsfrom WI State Fair homebrew competition?

Just FYI, that doesn't always mean there were only 12 in class (just based on my experience). They may have multiple judging tables depending on how many entries there were. Plus, they may also combine similar classes for awards if some classes have a low # of entries. Good luck! Jaz

    Problem w Perlicks

Are you sure you don't have the Perlick Creamer faucets? They are designed to pull forward to dispense and back to cream. Off is just forward of cream. In hindsight, they are a real pain if people don't know that they're creamers since most are used to all the way back being off. But, they...

    Recommended Barley Wines to try

I really like Lakefront Brewery's Bridge Burner. It's a barleywine with a firm amount of hops to support it. It's got an official clone that's available from Northern Brewer. http://www.northernbrewer.com/shop/lakefront-brewery-bridge-burner-pro-series-all-grain-kit.html Jaz

    Attention Wisconsin Brewers!!!!

Ok, Wisconsin SB395 of the 2011-2012 session has now officially become Act 200 as signed by the Governor on April 2, 2012. The publication is "done" with the official publication as April 16th, 2012 (next Monday) as designated by the Secretary of State. So, the effective date for the new...

    Home Brewing and Tax Deductions?

I would donate the raw materials and get a receipt from the group showing the in-kind donation. The processing of said materials is then something you do for them for no-fee. I don't think there's anything to stop you from doing that provided in-kind donations to that charity are allowed. My...

    Attention Wisconsin Brewers!!!!

Uh, no. I'm not sure where you got your information. But, a recall isn't going to change any completed legislation. If it's been signed (or failed to sign and signed automatically) and published, it's law until new legislation is drafted/passed/signed/published to change it. The only thing...

    Attention Wisconsin Brewers!!!!

I'm not sure when the signing ceremony will occur as they've passed a large amount of legislation over the last week or so. But, I would expect that to happen in the next week or two. Then it needs to get published which typically is a week. Per the bill, it goes into effect the first day of...

    Attention Wisconsin Brewers!!!!

Me neither. I'm pretty much a "calls it like I sees it" kind of guy. I would fail miserably if that was my career choice. But, as far as the legislative process, I've learned quite a lot following a couple bills in the past years. Although those were no where near as tame/bi-partisan as...
