    Another Yeast Question

    Calc your ABV and make sure the yeast van handle it. If everything lines up let it go. I'm going to guess that it will survive and make a good brew, with a slightly higher ABV.

    Porter All Grain help

    When I brewed my latest porter I added a cup of maltodextros, and 4 oz of lactos to increase smoothness. Saw the tweak on someone else's recipe and gave it a go. It came out fantastic, I'm down the the final six pack that I'm going to age a bit... If I can wait... I didn't want some crazy milk...

    How often do you disassemble your MLT?

    Pretty much why I came to that... Just curious if I was messing something in my process. Oh, and there is NOTHING wrong with airlock sniffing!

    Yeah, I used the fly guy build and put the cap on the end. Still when I did my stir it moved and shifted to the top during the last brew. I think I might just convert all copper manifold, or use an insert with holes. Though... I still got plenty of wort to make my Dunkel Weizen.

    Fermentation temperature question

    Perfect. Thanks for the quick posts. I'm not at the level if getting different temps for different beers yet, but you know how it goes. With every beer it seems my set up is expanding. Since my last post I took a few more readings and it's still in that range. Above 60 below 66. Thanks.

    Fermentation temperature question

    Ok. Expanding my fermentation set up from a closet to the basement. The only worry I have is that the temp in my basement. It's between 63 - 65*F. Right now I'm fermenting at approximately 68 - 70*F. Is the 63 - 65*F range to low? Thoughts?

    Ha, good advice. I'm going to keep it a week or two in the secondary then let them mature in the basement. Im thinking about brewing up a Dunkel weizen Next. Hopefully it will bridge the gap between now and porter o'clock.
