    Carbing and Bottling Cider

I have a 5 gal batch of cider using bottled apple juice with some added sugars. Starting Gravity 1.06 +/- Last Reading 1.012 +/- Using Nottingham Ale Yeast. At what gravity could you bottle and get a good carbonation rather than let it ferment all the way out and add corn sugar?

    Honey Brown Concoction

The original recipe was for a Mild English Ale.... 4.3 pounds of malt extract along with amber, chocolate and crystal malts. East Kent Golding hops for bittering (no aroma hops). This came in a kit. I plan on adding an additional 1# of DME Briess Light golden and 1# of honey at flame out...

    Too Much Sorbate

Well....during my multi tasking while brewing and bottling (brewing beer and bottling appleweizen) I seem to have added too much sorbate to my cider. It said to add 0.5 teaspoon per gallon and I added 0.5 tablespoon per gallon. There was a little cider left in bucket that didnt get bottled and...

    Sanitized Beer Bottles

Well I sanitized some bottles a week ago plus and they have been sitting in the cellar upside down in my home made tree rack. The question is how long is too long before sanitization should be done again. Using EZ clean 2 minute contact if it matters. Thanks.

Will My Ed Worts Ferment Further?

I needed my primary bucket to bottle some beer which was past due for bottling so I had to evacuate my ed worts apple brew to a carboy 10 days into fermenting. When I transfered into carboy SG reading was 1.03 +/-. The original SG was 1.052 to which I added a pound of corn sugar and a cup of...

    6 gallon carboy secondary

Does it make a huge amount of difference if you have a 5 gal or 6 gal secondary? I read about air space and oxidation but does it really matter considering the time it stays in secondary. I also have read that most users dont use secondary, but I have alot of carboys for wine making (6gal) and...

    First Batch Questions

MY cider is in the 6 gal secondary going on week 4. Will be racking to 5 gal. Starting gravity about 1.068. Quick questions. How long in third container? Do you really need a fining agent (pectin/isinglass)? Can it bottle age while carbonating or age then bottle? Thanks.

    Home Brew Testemonial

OK Thanksgiving dinner at my house with all the usual suspects (relatives and the ilk). Had on hand for beer selections Thirsty Dog sampler and Sam Adams Winter Variety Pack, Great Lakes XMas Ale and HomeBrew Honey Ale. My bro-inlaw opted for the xmas ale as a first selection not surprising...

    Murky Beer in Secondary

OK it has been about 14 days in a secondary and my irish red looks as murky as it did on day one. I did add a clarifier too the secondary about an hour after putting it in there. You can shine a flash light up near the top of the carboy thru the sides and see red but if you look directly in...

    Adding Honey

Welll my first batch of beer (ale) Honey Ale is coming along quite nicely. 2 weeks bottle conditioning and carbonation is good. I took my fourth sample 17 days out and gave it a shot of honey and mixed it into the beer. A little too sweet but man did it put a serious honey taste to the brew...

Can you Use a clarifying agent too early?

OK. So here are the events. The facts remain the same except you are there. After almost nill activity in my primary I racked to secondary. One bubble every three minutes or so. Let sit for about an hour and then added some super kleer and stirred her up "very gently" as per the directions...

    Really Sweet Cider to Start

I 6 gallons of cider and tested one of the gallons andits strating gravity is 1.059 +/-. I know you add sugar but doesnt this seem like a high sugar content for the cider by itself? My recipe calls for 3 cups brown and 2 cups white sugar - seems like alot. Any thoughts.

    Crazy Floating Things in Secondary

I have these large globs that are suspended mostly at the top of my secondary glass carboy. Various sizes but geherally on the larger size. Periodically they sink to the bottom and then rise back up. I did siphon in some of the top garbage from my primary. Any ideas as to what I am looking...

    Newbie DumbA$$ Question

OK. Brewing up a Honey Lager (actually an ale - basement not that cold). Put everything into primary 6 days ago and liquid was very sweet. Obviously cuz yeast hadnt aten up all them yummy sugars. Tested today - day 6 - very bitter from hops (another assumption). Does the bitterness mellow...

    Adding Additional Sugar to Primary

Howdy folks. Here is the dilema. I purchased a beer kit that uses honey. Unfortunately it was short 1 lb and I didnt realize until after I had pitched in the yeast. Can I add additional honey to primary directly even though it hasnt been boiled? Any thoughts or suggestions? Thanks.
