    How close to GF is this beer? (Recipe inside)

    Looks to me like that beer would be 100% gluten free. The main things to watch for is the malt and yeast, and both of those are fine in this case. In fact you didn't need the clarity ferm for gluten reduction purposes, if that is what it was for.

    Well my thought was that I'd squeeze the bottle before putting the cap on so that the beer was actually coming out of the top, thus having no room for oxygen. This is actually what the instructions on the carbonater cap have you do anyhow, I just won't be filling it up with co2 right away...

    I don't think there's any use in saving that water. I actually just rinse my oats real well and then roast them to the desired level. Depending on if you're letting them sit or not, which is recommended if you go very dark with them, you'd have to store the water for a week or two anyways.

    Just a quick couple of questions... Can someone who's made this go into a little bit more detail about the beets used? I assume they were fresh, not canned, right? And how long did you roast and at what temp? Then you just stuck them in a blender until they were pureed?
