    Grain roasting times

I haven't done any comparisons for character (and I don't think there would be much without the effect of an amylase containing grain), however, I decided to try a side by side comparison of soaked and unsoaked grains for toasting. The closest thing I had locally available is bob's red mill...

    Yeasts for GF Brew Success

Breiss says they make sorghum dme on their website but I've not seen it available for purchase. Maybe at special request a brewshop would order it for you.

Gluten Free 2 Hearted Ale Homage

I've been savoring it for a while and I think I stand by my comments. Maybe its just a hop head who has been ipa starved for years but its really pretty good. Next batch I'm going to ditch the table sugar and try to steep some toasted grains for a slightly more rounded malt flavor but...

    Maui Brewing Company Coconut Porter

I've never had that one, I didn't know anyone was making one commercially! This coconut porter is certainly one of my favorites. It comes from Fujiura, homebrewer of the year for 1998 by Zymurgy magazine. I adjusted it for a full batch of course.

    Thoughts on Sam Adams...

I never had one I really loved but I think they're a good company.

Gluten Free 2 Hearted Ale Homage

Two hearted ale is, in my opinion, the best american IPA out there. I miss it and its amazing taste. It had to be the first beer I'd try to make. I did a partial boil with about 3 gallons in the pot. 9# sorghum syrup 1oz centennial pellets @ 60 1oz centennial pellets @ 20 1oz...

    california common recipe?

Anyone tried to make one? I got the idea tonight and thought I'd see if anyone had gone there yet.

How clear are your sorghum beers?

Did you use any kettle fining?

How clear are your sorghum beers?

So I just bottled my first g/f beer tonight and man its still really really cloudy. It sat in primary for 2 weeks, secondary for about 10 days, I cold crashed it for 2 days, then added gelatin for another 2 days in the cold, let it sit for a couple hours before I racked it after moving the...

    showing off an oldie

I'm getting back into brewing so hopefully new labels will be coming down the pipe soon, until then though here's the label I used for my old rasputin clone.

    22oz Bomber Labels

How's it look printed? Lots of art seems to look better on the screen rather than when it hits the paper. I love the idea though.

    Forsaking Brewing Software

I'm somewhere in the middle, I didn't love the commercial software packages, but I wanted something more convenient. I wound up making my website to meet somewhere in the middle. It keeps me a little more hands on in my recipes but also cuts down on time/errors.

    Online hop prices..

Are you factoring in the cost of mylar bags and the work associated with divvying up/sealing all the individual portions from that bulk pack? Thats gotta eat up a decent amount of margin on its on, I bought regular vacuum bags a week or two ago and almost crapped when I saw the price.

    plasticphobia

One of the things I've continually read since I started brewing is how plastic gets to be unsafe over time. Buckets need to be replaced, hoses get replaced even more frequently. Before the carboy crisis you'd have thought the better bottle was pure evil, now it seems like most people love...

20% off Thermapen (best digital thermometer)

Got a thermapen a week or two ago and its my best friend in the kitchen already. No more wondering how far off each cheap digital is today or waiting 30 seconds for a real reading. Its fantastic for quick checks of meat to be sure my food is cooked safely but not overdone. I've also been...

    Help me understand GF Brewing!

Yeah I have had concern that breiss is only making sorghum extract for AB. If they ever pull the plug on redbridge I wonder if our source will dry up. I'll also add that I've been re-reading mosher's radical brewing lately. I think its an excellent reminder of all the creative ingredients...

    Help me understand GF Brewing!

Anything made from wheat, rye, and barley contains gluten. Its a questionable matter but it seems like oats are probably safe, but contamined from shared fields and equipment. There are a couple companies that produce gluten free oats. I also disagree with the flow chart when it says "up...

The saddest day ever for my brewery...

I loved the sure screen for dry hopping in the keg with whole hops.
