    I've been working on putting together a holiday brew, and I'm looking for some opinions on what I've got so far. 1/2lb Chocolate Malt 1/2lb Black Patent 1/2lb Crystal 40L 5.5lbs Light DME 1 1/2oz Fuggles (4.75%) @ 60 1/2oz Fuggles (4.75%) @ 30 1oz Bitter Orange Peel @ 15 1oz Sweet...

    Holiday Porter

I'm looking to brew up a Holiday Porter with some orange and clove spices. I was hoping to use Sam Adams Holiday Porter as a base recipe and adjust to fit my needs. I seem to recall seeing a clone recipe for their Holiday Porter in BYO last fall (Interweb says November 2013 issue), but alas...

    Blonde Ale Tropical Blonde Ale

Truthfully, there is such a small amount of Mosaic in there, especially when compared with the later additions of Citra, that I'm not sure how much of the Mosaic character comes through. I would say that you could easily use all Citra, or a neutral flavored bittering hop without much...

    Blonde Ale Tropical Blonde Ale

This is a crisp summer ale that highlight the flavor of Citra hops. Finishes crisp without as much sweetness from the honey malt as expected. Perfect for stirring on the deck with the grill going and kids playing. Boil Size: 2 1/2 gal Grain: 1 lb Crystal 10L 1/4 lb Honey Malt Steep...

    Tropical Blond Ale

I think there is a bit of sweetness to it, but in my opinion, it isn't overbearing or even dominant. With that much Citra on the back end, I find the residual sweetness plays well with the tropical fruit flavors of the hops. I don't know if you'll still see that with the Willamette and...

    Tropical Blond Ale

    I did a partial boil with a late extract addition. 2 1/2 gallon boil, 1 1/2 lbs DME @ 45, 4 oz corn sugar @ 30, 3 lbs DME @ flameout.

    Tropical Blond Ale

I'm not an all grain guy, so maybe someone else here can answer this...I'd guess about 7-1/2 LBS of 2-row, but I'm not sure of the mash temps and all that data...

    Tropical Blond Ale

I guess it depends on how much sweetness you want to show through. I was trying for something with a sweet note, and I think this came out right were I wanted it. I don't find it to be overly sweet, or have a caramel/honey aftertaste, but it certainly is more on the sweet side than the bitter...

    Tropical Blond Ale

While the aftertaste was crisp and didn't have much lingering flavors, the front end was quite tropical. I guess it all depends how much of a punch you want. I didn't find it to be lacking the Citra flavors.

    Tropical Blond Ale

Two weeks in the fermenter, and three in the bottle and I finally cracked one tonight. Beer was fantastic. Had a very strong pineapple/grapefruit flavor with a real crispness to it. I think the honey malt gave it a nice balance with the fruity flavors, without leaving a sweet aftertaste. As...

    Tropical Blond Ale

Yeah, Billy, but I was wanting to stay with a similar flavor profile. Really wanted todo Galaxy, but it seems like no one has any, so the LHBS suggested I try Mosaic. Haven't used it before, so I figured why not give it a go.

    Tropical Blond Ale

I got the stuff to make it today, just wondering if my proportions (especially the honey malt) seem good. I'll keep you posted!

    Tropical Blond Ale

    Can someone give me an opinion on this recipe? I'm going for a light, crisp and "tropical" session for the patio this summer. 1lb Crystal 10L 1/4lb Honey Malt 4 1/2lb Golden Light DME (4L) 1/4lb Corn Sugar 1/4oz Mosaic (12.7%) @ 45 1/2oz Citra (14.1%) @ 10 1/2oz Citra (14.1%) @ 5 1oz...

    1st.Brew here we go!

That's probably a good sign. Since you took the lid off and gave it a gentle stir, you released any CO2 pressure in the fermenter, so new bubbles is likely a sign of active yeast. Since you just moved it yesterday, I wouldn't fiddle with it today. Just let it sit for a few days until you no...
