    That's about the same with me. She likes Mead and I've been making quicker ones for a few months. So, now she says make 2 meads and then you can brew a beer and make some wine. Then 2 more meads....etc

    Most mead, in my experience does well with aging. That's part of our problem, we are impatient...lol

    Thanks, I'm really glad to be back. Funny how a change in situation can make SWMBO decide it's a good thing to brew your own beer/wine/mead. The Mead is how I got her hooked.

    I think a summer ale along the lines of Sam Adams Summer Ale, should be quick. But then I thought I'd brew an Irish Red Ale, I saw an AG recipe here yesterday that looked really nice.

    Is it just me or does home brew make you parp?

    I doubt it's lactose intolerance. Yeast in beer can cause gastrointestinal distress. It's the yest.

    Undissolved extract. Will fermentation dissolve it?

    Doing a boil would help, but shaking may not be enough. Lots of stirring to break that up can help as well.
