Newbie with cleaner and sanitizing questions

I've been brewing beer for 4 or 5 years and have been considering brewing wine. I finally just bought a merlot kit and am planning on making it. I'm trying to use existing stuff I already have. The instructions say to use one step cleaner. Is this any different/better from pbw? They also say to...

    Thinking of Switching

I have been brewing my own beer for a couple of years now and have only made 8 or 10 batches because I don’t really drink that much beer. I give some to my son and a friend to get rid of it. I tend to be more of a wine drinker so I started looking at making my own wine. I had thought it was much...

When to add LME and DME

S-Met - No, I still boil for 60 minutes. I just wanted to add it during lower temps. BrewnWKopperKat - Yes, I am aware of this, but so far I've only brewed dark beer and stouts as these are my preferences. And, I will check Palmer as you suggested. Yes, I do turn off the heat while adding...

When to add LME and DME

First of all I have only done full volume extract brewing. I haven't gone to all grain (yet). I have often wondered "Why not add the LME/DME at the end of the 30 minute steep?" In either case, you have to watch for boil-over, but what advantage is there to bring it up to 210 -> 212 before adding...

Splitting a 5 gal extract kit to brew 2 1/2 gal batches

Can you ferment this in a 6 gal (big mouth) container?

    low quality bottle caps

I have used two different kinds of bottles ... bought them from the lhbs, and 'recycled' store bought beers. I have noticed one local brewery, Summit, has a bottle with a shorter grab area on the neck than most of the regular bottles. The shorter grab area will not seal as well with a wing...

Cleaned Water, Tap Water, or Adjusted Water?

I've been brewing with RO I buy in my local grocery and fill my container from a dispenser. Costs less then $2 for 5 gallons. I have been only brewing extract but haven't added anything. How much salt and bicarbonates would you recommend for a 5 gal batch? Is there a good reference site for...

    brew bucket doesn't empty

KB12, I think this is what you mean, too. My brew bucket doesn't have a racking arm and it still got clogged. Must be the hops as Maxstout mentioned. Yes, cactusgarrot, I do whirlpool while I am cooling to keep the temps somewhat constant. I cool by recirculating ice water through my immersion...

Not sure what you mean by this.

    brew bucket doesn't empty

Yes, I am. I didn't realize they would leave a lot of trub. Both extracts had a lot of hops, however. Especially the chocolate milk stout. I'll try bagging them from now on. I will add I'm considering moving on to BIAB.

    brew bucket doesn't empty

I have a 10 gal brew bucket with a stainless spout and am brewing 5 gal full volume extract brews. The last two of times I wanted to transfer into my fermentation bucket the brew didn't flow out of the spigot. How do you guys keep the trub from plugging the spigot? The last 2 brews were from...

When do you add the LME

Palmer says to add the LME when you pour the water in and before you heat it (p 144 of latest edition). Others say to add it right after the specialty grain steep. My LHBS instructions say to add it after you reach boil. Which is best? I believe Palmer is the so-called "expert".

    Bottle Cleaning

Thank you. Yes, I'm talking about the swingtop bottles.

    Bottle Cleaning

A good friend just gave me 18 of the 16 oz ceramic capped bottles. How do I clean these puppies? Can I just remove the rubber seal or do I have to remove the whole cap? I was planning on a 24 hour soak in pbw then a rinse and another 24 hour soak in pbw and another rinse. Of course, sanitizing...

2nd batch. Help me tighten up

I am a newb also. Just restarted (after a 40 year hiatus) in January. On of the first things I did was make a wort chiller... actually two. The first was a 3/8" x 50 foot one, but found out that it was too small for a cheap recirc pump. So, I made a 1/2" x 50 foot one. All sorts of You Tube...

    A new screw-up

Thanks, everyone for your encouragement. It was probably not as huge an error as I thought it was.

    A new screw-up

That's exactly the way I did it 40 years ago. Only we used table sugar then.

    A new screw-up

After 2 great batches I finally made a (IMHO) huge error. I was bottling my third batch (a 5 gallon oatmeal stout extract from Midwest, no secondary fermenting). I cleaned the bottles, rinsed, and sanitized. I then made up my priming solution, cooled it somewhat and poured into my bottling...

    BIAB vs AG recipes

Yup, my local grocery store sells RO for 39 cents per gallon ... or 5 gal for $1.89. That's hard to beat. The pulley is also a must! Living in Minnesota, my basement temperature is 62 degrees F. Too warm for a lager, but not bad for ale.
