    How long for water bath fermentation?

    So I brewed a Saison about a week and a half ago, and have kept the fermentation bucket in a water bath at 55-60 for about 5 days, and have let it slowly come up since that.     Good craigslist find...I think.

    off taste in hydrometer sample

    So, I brewed a Nut Brown ale, and it seems to be hitting FG. Hydrometer sample today was 1.006 and it was the same Monday. Can't bottle until Sunday. My problem is that there is an off taste to it. It tastes harsh, and kind of like a acetone taste (like nail polish removal). Smells like...

    all grain extract kit...cutting it down?

    So, I'm worried now. I got my extract kit together and had them mill grains before shipping. I got it yesterday, opened up the box, and EVERYTHING is mixed all together, nothing is seperated. So, can I still scale this down to 2.5 gallons, for example, or are all my ratios going to be off?
