    If you want a nice dry cider I use red star champagne yeast.

    Do you have a hydrometer? Do you have anything food safe that's bigger than 2 gal bucket or carboy wise? It's best I've found to hydrate my yeast in warm water, I guess the cider shocks the little guys.

    Honestly, and this is just me but I would use Nottingham and start with an OG of 1.16 or something nice and high. I use table sugar.
