    Vinegar in beer whoops

    Sampled it yesterday before kegging and I think it's going to be great.it has a very very very slight sour taste that helps accentuate the pepper taste. Will give another report in a month.

    Haven't sampled it yet. Figured I would just let it run it's course and taste on kegging day. I noticed it has turned a reddish color from a golden color. Interesting. Will keep you posted.

    Refrigerator/temp controller

    I installed the Johnson Temp Controller on my fridge a few days ago and it works great at maintaining good beer serving temp. I did however notice there is a pool of water on the floor of the fridge inside, I assume from the ice compartment melting. Not sure if this will be ongoing problem.

    Ok thanks. I was reading somewhere that 50 to 100 ppm was desirable so it seemed a little low. I also read that Chloride should be 10 to 100 ppm. I am assuming that calcium chloride would raise both?
