Yes, you can start steeping when the water is heating up. I used to add steeping grains at 150F and steep for 30 minutes not letting temperature go above 170F. I got that information from John Palmers How To Brew.

Agreed, I reckon I'd be pretty excited if it was happening down the road from me too.

    Spencer Abbey Trappist Ale!

Yes I can compare them. Right, Andechs has good food as well, grown on site and their prices are on par with other beer gardens in the area. Spencer will be putting out a product and asking exorbitant prices based on the Trappist "brand" Good on them, I won't partake.

    Spencer Abbey Trappist Ale!

Don't get me wrong. I enjoy the Trappist beers. I've tasted a few on site. Ok 1 site a few beers. I've bought and tried all I've been able to get. However, I hope a lot of money goes to charity at that price. Because after all they are just a bunch of Cisternian splitters! ;) Andechs abbey near...

But I certainly like the previous ideas of making 2 beers out of your kit. Adding some cane sugar to each will leave you with a dry finish. I'm going to play with it a minute.

You will get pretty much the same bitterness if you leave out the last 2 hop additions. The 60 minutes hop addition is for bittering, 15 minute for flavor, 5 min and flame out for aroma. If you halve the first hop addition you will end up with a considerably less bitter beer.

    Spencer Abbey Trappist Ale!

17 to 19 dollars for a 4 pack of 11.2 ounce bottles? I'll pass and brew a batch.

To the secondary in a week?

You can just leave it in primary for another week or two and not bother with secondary at all unless you need your primary vessel for another batch. If you really want to transfer to a secondary vessel you can do that now or wait a couple more days. Personally I don't transfer to secondary...

Never brewed - wanting to jump right into all grain

I see nothing wrong with going straight to all grain. I started in April, 3 extract brews and 18 all grain using Denny's quick and easy batch sparge technique. I only bottled my extract batches before building my keezer. As far as money is concerned, well that's your business how far you go with...
