Best pale base malt for 'malty' beers I can SMaSH with?

I use briess pale ale malt in my house IPA and It's always a hit. It started out as a smash with the pale malt and columbus hops, but I have switched to bravo for bittering now since it's not quite as harsh as the columbus. The pale malt gives you a little extra color and a pleasant, fresh malty...

What I did for beer today

Bottled 25 gallons of blonde ale (cheated and threw the last 5 gallons of 30 in a carboy to mess with another day). Brewed 20 gallons of IPA straight on the cake. Used my first hop harvest of 1/2lb cascades as part of the flame out addition. 70 gallons brewed in the last 6 weeks. Laying down the...

    Bottling..."For the first time"

This has worked fine with no soap at all in the dishwasher for bottles that had been timely rinsed and stored. I've added 2 scoops of PBW when there was junk in a few bottles and made sure to put them in a place they would be sprayed more (not the corners). Theoretically, if you have clean...

    Bottling..."For the first time"

Yes bottles upside down on the "spikes" that hold the dishes. I do not use any other sanitizer. The sanitize function keeps it above 160 for long enough. I can fit 24 22oz bottles and I put another 8 12oz bottles in the silver ware basket. I put the wand on the top shelf.

    Forgot the Maltodextrin

Unless you have a primary with a lot of headspace, you are likely better off adding after the primary fermentation especially for larger beers. I learned my lesson with an imperial stout that turned into a uncontrollable foam machine for 3 days. Overflowed the gallon jug blowoff and covered my...

    Fruit beer--mold or no?

Last year I made a cherry beer and jammed loose cherries through a funnel into a carboy and racked on top. The floating fruit cap developed a very gross looking mold, so I racked the beer from underneath with a siphon in a hop sock to a tertiary vessel. No floaties in the the final carboy and...

    Bottling..."For the first time"

+1 on the dishwasher. Many dishwashers have a "sanitize" button or automatically do it (like my bosch). So starsan is not needed. Put your bottling bucket over the dishwasher and bottle with the door open to catch any mess. I used to wait until the bottles cooled, but have been filling them hot...

    Adding nuts to beer

I made a pecan extract for a porter. I blanched the the raw pecans for a minute (read somewhere this reduces tannins/astringency) then roasted till dark brown in oven on parchment paper, let cool and coarsely ground in food processor. I put this into a mason jar and covered with everclear (190...

hops flavor in an ipa without secondary?

It is important to rapidly cool the wort for IPA's. The five min. or flameout additions turn to bittering hops if it takes longer than 30 min to cool. When I switched to a plate chiller I found I did not even need to dry hop for a good IPA.

    Mark 2 Keg Washer

Rather than starting another thread, I will continue to poke the zombie. I just wanted to let people know that the 120L speidel fermentor just barely fits on the mark ii. It's a little bit splashy so indoor use would need some towels laid down, but I'm glad I can continue to use this...

    Did my yeast reactivate?

    large scale BIAB

i raised the basket up about an inch with 4 stainless bolts. here's what it looks like with the 20 gallons and 65lbs of grains. i could likely squeeze another 5 to 10 pounds of grain in without reducing the strike water but it is unlikely i will need to. the wife helped me dough in the first...

    large scale BIAB

the amazon link is for a very similar if not identical model. i was looking at that until i found it cheaper at walmart (even though i usually try and avoid them, i correctly figured it would be the cheapest place to get hunting gear). those two models have the bolt on winch, i was reading that...

    large scale BIAB

I wanted a system that could handle an entire 50/55lb sack of base grains with the minimum amount of equipment. so, i started with the 30.5 gallon bayou classic pot with perforated basket, and had a custom liner made. I have seen other people using block and tackles or electric hoists, but...
