UPDATE -
I dry hopped at 1.020 on day 4 (3.5 ounces 2.5 Simcoe, 1 Summit).
On day 7 I dropped the temp on my fridge from a d-rest of 72 down to fridge temp of 40deg. I also hooked up the co2 and set it to 10psi. It probably took 36 hours to get down as it's just a dorm fridge with the freezer...
