Isolated Yeast (Tree House): How to Identify and Characterize?

If 5 is s-04 I’d love to know how they get the haziness from it because I can’t get s-04 to biotransform to save my life no matter what I try. I will say underpitching it does produce some lovely flavors but every beer I make with it clears.

Isolated Yeast (Tree House): How to Identify and Characterize?

Well balanced, definitely not over bitter in my opinion. I whirlpooled for 20 minutes.

Isolated Yeast (Tree House): How to Identify and Characterize?

Hope everyone is well. Not sure if anyone has brewed the recently released Treehouse recipe, but below is a side by side of the recipe on the left, and Very Hazy on the right. I have to say, I really love this recipe - the thing that stands out most to me is the malt bill. After I dry hopped...

Isolated Yeast (Tree House): How to Identify and Characterize?

Good plan! How much per gallon do you dry hop when fermentation is complete? I’d say add those dry hops to the flask, mix well, then add to the fermenter. Once in the fermenter - mix everything well - that might replicate what I’ve done and if it’s correct you should get the aroma and flavor...

Also, do you ferment under pressure?

Yes, the acetaldehdye one faded a bit but the fusel one didn’t. I’ll try 63F. Does your ramping up happen over a week?

    Warm Fermented Lager Thread

Hi all! I’m attempting to catch up on all 1,800+ posts on this thread and I’m curious about the current best practices. I’ve attempted this twice with two similar Festbier recipes and while they were both ok, they had two noticeable off flavors. The first had fusels (I fermented at 66F and...

Isolated Yeast (Tree House): How to Identify and Characterize?

Question for anyone who has tried the Project find the limit series - do they taste more like Monkish style NEIPAs or do they taste more like hoppier (like opening a Fraser bag of hops)/potent versions of Treehouse? I’m wondering if the hopping rate for most of treehouses core beers is much less...

Makes me wonder what the hopping rate is for king jjjuliusss

Isolated Yeast (Tree House): How to Identify and Characterize?

Hope everyone is well! Two questions: 1. Is there anyone doing PCRs on yeasts currently? 2. Does anyone know around when Julius changed from the clearer/deep orange version to the hazy version it became today? Thanks and Cheers!

New England IPA "Northeast" style IPA

Sorry IBUs. Just looked back on the recipe and for this beer the IBUs were 8.2 in the mash. Next recipe I’m going to go higher and see how the bitterness is or just go with warrior hops maybe?

New England IPA "Northeast" style IPA

According to my numbers in Beersmith 76.5%. Good job!!

New England IPA "Northeast" style IPA

I don’t do 5 gallon batches but I think about 2oz of cascade in the mash and I used equal amounts of Citra Galaxy and Nelson hot and cold. I’ll look later and see. I’m sure there is plenty of room to play with when it comes to mash hopping - the pictures in the Omega article looked like they...

New England IPA "Northeast" style IPA

I’m not sure if it’s adding hops in the mash, cosmic punch, or both, but there is definitely something to it because this is the best NEIPA I’ve made to date. I added cascade in the mash and accounted for approximately 10 AA according to beersmith. I’m going to be playing with these numbers in...

New England IPA "Northeast" style IPA

You definitely should. I’m probably going to make it my go to yeast for NEIPAs now. It’s way better than verdant in my opinion.

New England IPA "Northeast" style IPA

I did sample it post. I also added a small amount of dry hops after I harvested yeast (day 3). The batch smelled lovely even before dry hopping - definitely more potent than LA III - lots more peach in the aroma. Post my gravity was 1.017, I mashed at 156. Going to dry hop it tomorrow at 50F...

New England IPA "Northeast" style IPA

Just used cosmic punch last week. I highly recommend it! It’s definitely a way fruitier/tropical version of LAIII. I’m about to do a second dry hop on that beer now. I mash hopped with cascade but I went light on it (10 AA for the entire batch) because I wasn’t sure what the rate they used was...

    Krausening Lagers

Thank you all for your input. I went with the cbc1 method. I should have gave more info about the wort I saved. I usually save it in purged kegs with CO2 so it still seemed pretty fresh and bready when I repitched. No signs of oxidation. This lager is quite lovely. The mouthfeel is unreal as...
