How much honey would one use to back sweeten a 5-gal keg?

I was just delivered a 20kg (40lb) bag of unmalted orgainic soft white wheat from a local grain farm. What the hell do I make with this? German wheat beer? Bealgian white?

Thanks for the input. I can get my hands on some Chinook; would that be closer to Citra? Gonna have to talk to my LHBS about ordering more hops varieties and get some Citra for a future batch of this.
