    I'm just taking a guess, but it is most likely intended to concentrate the fermentable sugars in the wort. I'm interested in hearing the answer that others have as well.

    Yeah, you can add water if its pre-boil. That way the boil will purify the added water. If the post boil gravity is high, the you should only add distilled water to avoid infection. Or, of course, you can also simply enjoy a bigger beer :)

    To be honest, I don't really know how extending the time between mash out and boiling will effect the beer, but my guess is that you will be just fine as long as you keep the wort in a closed sanitized environment.

    Thanks for the input from everybody. The fermentation is staring to slow down and I'll be taking a trip to the LHBS this weekend to pick up some Cascades and maybe some Citra for dry hopping. I'll let you know how it turns out.

    Thanks for the quick replies. That will be way enough. The wort was made with a mix of Cascade and Pacific Jem. Thoughts on drop hop options? I was thinking of going all Cascade, but I'm open to suggestion.
