FInally got my order from Northern Brewer.
I ordered 3 different varieties of hops (1-oz pellets), 16 oz in all. The alpha acid % was not listed on any packets. While I can ball-park the flavor & aroma additions with those intended for that purpose, the magnum hops meant for bittering is a...
Makes me seriously consider switching to Crystal hops. As long as American and British hops retain their aa%, I'll be ok. But then there's Tettnang, another one of my favorites.
Recently picked up some Hallertauer Mittelfruh with a 1.8% alpha acid content. I'll be using it for flavor & aroma additions to llimit the amount of vegetable matter in the spider. However, I've never come across such a low AA percentage. Anyone know of any issues with numbers this low?

Those kits, esp for the Desert Wines, seem to be pretty rigid in their ingredients and process. I seem to recall the chocolate and raspberry comes together in a single packet called a Chaptalization pack. To attempt to alter the ingredients without having made one of the kits before hand would...
Some of the port wine kits might have something close to what you are looking for. Winexpert, for example. I did a chocolate raspberry port wine once. Not too bad, for what it was. My wife liked it.
That's a good grain bill, about what I use.
