Thanks for all the encouragement. You guys are the best. The 1.040 was after the boil. I probably could have boiled longer but was afraid I would have had to boil off too much. Anyway, cooled the wort down overnight to 68 and pitched Wyeast 3068 today. I hope those munchers don't mind less sweet...

A "Brewster" is a female brewer. A few centuries ago women were the beer makers in society...it was deemed as women's work. She brewed for her family and sometimes sold it to support the family. I am proud to be a Brewster in name and hobby.

Thanks, all. I do like SNPA on a hot day. I will check out the others. Actually, I am going to take a slight dip (instead of the plunge) and brew EdWort's Haus Pale Ale. Ordered the ingredients today. Am I brave or what. ;)

I've always thought that IPAs would be way too bitter for my tastes, but it sounds like the bitterness is not always overwhelming? What would be a good IPA to start with for a bitterness-shy person?
