    Thanks for all the encouragement. You guys are the best. The 1.040 was after the boil. I probably could have boiled longer but was afraid I would have had to boil off too much. Anyway, cooled the wort down overnight to 68 and pitched Wyeast 3068 today. I hope those munchers don't mind less sweet...

    Made EdWort's Hefeweizen today cuz my last attempt at a Hefe was far from stellar. So I was ready...new HLT...doing a batch Sparge per Ed's routine...thought I was golden.     A "Brewster" is a female brewer. A few centuries ago women were the beer makers in society...it was deemed as women's work. She brewed for her family and sometimes sold it to support the family. I am proud to be a Brewster in name and hobby. Susie

    Thanks, all. I do like SNPA on a hot day. I will check out the others. Actually, I am going to take a slight dip (instead of the plunge) and brew EdWort's Haus Pale Ale. Ordered the ingredients today. Am I brave or what. ;)

    Labels stuck in with milk?

    I use an Elmer's glue stick like the kids get for school. It's water-soluble so comes off easily for bottle reuse. The drawback is sticking the bottles in a cooler, but this time of year, no problem. Susie
