    I'd estimate about 25% of what I brew are IPAs - NE, west coast, whatever. I have 4 taps and one is always an IPA. Other than that, i brew all types of ales, lagers and sours.     Brewed a kettle soured blackberry milkshake IPA this weekend. It's going to a local event/competition where off the wall beers tend to do better. Last years winner was a NEIPA with glitter, named "Unicorn Piss". Will be brewing NEIPA this coming weekend with Columbus, Strata and Denali.

    Fruit flavor fades over time. If you want more of it present, I'd do the bulk of aging before adding fruit, then let it sit on fruit for a month, then package.

    Ok, so this is a weird one. Cleaning some kegs today with my normal process. I have a regulator with two outputs. One goes to a 4 way gas manifold in my keezer,, and the other stays out to use for pressurizing kegs mostly while cleaning. Had a keg 100% full of oxi - no air space at all. Attached...

    In just over 6 years and 175ish brews, I've had a few dumpers. I was probably 30 brews in before I had one that had some off flavors I couldn't stomach. Dumped one due to horrible recipe design, and a pilsner about a year ago that also had a bad off flavor. But, I know exactly where I went wrong...

    Brewed 10 gallons of MTF reverse sour. 5 gallons will get apricot, 2.5 will get blackberries, and still undecided on the last 2.5 gallons. Narrowed down to gooseberry, sour cherries, and hibiscus with dry hops.

    I would love to know how that works out. I really want to dry some myself, but ovens lowest temperature is 180F, and I'm kinda paranoid about open air drying. I'll try it eventually.
