Do you *have* to use an enamel/stainless steel pot or can you use an aluminum one with no negative effects? Or even better, a Magnalite pot?

As for the Fn button problem...Occam's razor principle. Have you tried popping the Fn key off and seeing if there's something under it? It happens sometimes.
I've got licenses in water/wastewater treatment (expired by now, but the knowledge remains) and that was my first guess. Hard water can cause off flavors in everything from coffee/iced tea to cooking.
