Sorachi Ace isn't anything like what you'll taste in regular Sapporo in spite of them developing the hop. If you want a Sapporo taste, I would just go with a noble hop like you suggested. Spalt should be fine. Maybe an ounce for bittering and an ounce split up as two late additions to get you...
550 won't give you a Hefeweizen or a Wit, but it will give you a great beer. I would give it a little longer to age than a hefe or wit (both of which can be drunk young).
Stone brewed (maybe still does?) something similar called Cali-Belgique I think. Flying Dog makes one called Raging *****. I'm not really a fan of them, something about the phenols & hops don't sit right with me, but I know a lot of people really dig the style.
I would just email them. They really shouldn't even send those out with the alpha acid content.
If for some reason they can't provide it, a quick google search showed a few places selling 2010 Cascades that are 5.9% AA.
