Wyeast 3711 at bottling: high abv, cold crashes, and gelatin fining

Bomber how much yeast was added to each bottle, just a few specs?

WEIRDNESS Abounds - First shot with extract recipe.

I'd say try a huge late hop or dry hop addition on one of them, huge boil addition will probably be terrible... way too bitter and you'll have boiled off all the aroma. Or better put them in a paper bag and throw it in the rafters to age for a couple years, then brew some lambic.

Wyeast 3711 at bottling: high abv, cold crashes, and gelatin fining

Thanks. I didn't make it out of work before the homebrew shop closed, so I'm taking that as a sign to just bottle with no additional yeast. I'll see how it goes.

Wyeast 3711 at bottling: high abv, cold crashes, and gelatin fining

I’ve searched but haven’t come across a situation quite like this: let’s call it an experimental brew along the lines of a Belgian double IPA, or something like duvel tripel hop. I’ll cut to the chase and ask if anyone would use additional dry yeast at bottling for a 10%+ abv brew that has...

    24 hours, no air bubbles.

I had a batch show no airlock activity at all and it turned out fine... The CO2 just escaped elsewhere (like a leak in the lid, crack in the airlock, etc...). Give it time and check gravity, that's the only way to really tell what's going on.

Saison le petite - Northern Brewer *recommendations*

Made this as my third batch, by far the best of them. Also my first with liquid yeast... I did a 1L starter for the 3711. Ambient temps in the high 60's and it turned out clean but still clearly belgian. Bucket temp hit around 72-74F per the temp strip. There's a huge thread on 3711 where you'll...

Smacked the h*** out of my smack pack (Wyeast)

It's recommended to sanitize the pack before cutting it open with scissors, so my concern would be the yeast has been contaminated unless say the hammer, pack, and surface it was on were sanitized... would go with a new pack personally. The internal pack is just a viability check anyways, the...

    Hydrometre readings

Did you add water to bring to full volume after the boil? If so it's possible the hydro reading was off due to incomplete mixing... on my second batch i thought I royally f'd up when the reading was 30pts low, I had shaken it some and thought it was adequately mixed with top off water but found...

    Fermenter head space

Was wondering this myself... Have a small secondary experiment going in a growler filled very close to a stopper/airlock, and a few oak cubes floating in that small space. I added the dregs of a JP Bam Biere (brett, lacto, ???) so I'll see how it goes with very little headspace, plan on giving...

    No action in the airlock

The second batch I ever made had no airlock activity, not a single bubble, but finished fine. Same bucket, lid, and airlock bubbled on the next batch... Sometimes you just have a small air leak so you don't see activity.

Time for pre-emptive burp and recap? Overprime and maybe other issues...

Bottled my BB Russian Imperial Stout 1 week ago, checked 2 bottles today and had pretty severe gushers at room temp (but delicious!), put a few in the fridge to check over the coming days. This was actually my first homebrew, quick overview: Went from O.G. 1.080 down to 1.025 after 8 months...

Poll on what to do with this stuck(?) RIS fermentation

Longterm update... my plan to wait several months turned into several more, finally bottled last week after 8 months in the secondary. I had not checked SG all that time and it had in fact dropped to 1.025. Still tasted too sweet, but I don't think there were any O2 exposure issues, and the...

Poll on what to do with this stuck(?) RIS fermentation

Update: after rousing yeast twice and keeping close to 70F, still no action. So with it at 1.030 I just ended up transferring to 5gal glass secondary with 2oz oak cubes, I'll give it a couple months there... It is sweet, but drinkable, should be 6.5abv. This frees me up to do a new batch of...

Poll on what to do with this stuck(?) RIS fermentation

Checked it today, still right at 1.030. Gave it some gentle stirring, definitely a compact cake at the bottom - not sure how much I could really rouse it (clumpy). Will check back in a couple days. Wondering if I should do a starter or something else and repitch to get the last 10pts if it...
