Hey guys, A couple days ago I started the thread "Craft Beer freak on California for the first time. What must I do?". People gave very good tips and now I have lots of bars to visit. Now I want to know what individual beers are musts. What are your top widely available californian craft...

Craft Beer freak on California for the first time. What must I do?

Dude, here in Brazil things are different. A good beer can be found almost everywhere - and its a pretty big country too. Of course there are some which will suffer from not being pasteurized, but most of the beers can be bought on all the bigger cities - or at least online.

Hop Tea with priming sugar for maximum hoppiness

Yeah, I did it. Good results, actually. Not the strongest aroma/flavor, but good amounts of them. The profile is different from dry hopping, thats for sure.

Using weizen yeast to ferment torrified whole COFFEE beans

Almost every coffee you get is fermented at some level, right after the coffee cherries are picked up. Most of the coffee is fermented just enough to ripe off the membrane that covers the green coffee been (the enzymes dissolve it). This is called "wet method", cause the coffee beans are placed...

Using weizen yeast to ferment torrified whole COFFEE beans

Ive got this idea. It wil cost me some coffee beans and some yeast. Not a big deal, since there is always waste of good healthy yeast when you use a conical fermentation bucket. This yeast would be added to a mixture of 50% honey or maple syrup + 40% water + 10% brown sugar. Get...

    Water profile

Hey guys, I brewed a 5gal APA last saturday and tried another water brand. I also added gypsyum and chloride. Lets see it the difference in pH and mineral will do any noticeable change on final product. What do you guys think? Here is the water profile: pH at 25ºC: 6,77 Calcium - 1,55 ppm...

Hop Tea with priming sugar for maximum hoppiness

Im finally going to try this. Brewed a pale ale with 100% pilsner malt, mash temperature around 150F and only 1 oz of Amarillo on the last 30 minutes (around 20 IBU). Fermentation started at 1050 and is almost over at 1014, which is about 5% abv. Added 40ppm of Chloride and 160ppm of...

    Reducing oxidation on bottled homebrew

Is it? I got the numbers from the product information. I use water that comes in containers like that one Ive found a study that regards pH water sold on those containers here in Brazil. Most of it is actually higher than 6, but some are close to 4. They analysed almost 40 water sources. You...
