Has anybody attempted to split a chest freezer to half half frozen and half as a fermenter? I can't think of anyway that it would work without some pretty heavy modifications

Ya, I was thinking more along the lines of being able to distribute them outside these states. The demand is there, not so much the supply I am guessing.

So I was reading somewhere that breweries have to apply on their license for each state that they plan on selling beer to. Is this true? If so does it make it illegal for them to go outside their "boundaries"? The whole distribution tree thing confuses me. Trying to figure out ways to get beers...

Tough to say. The yeast might be too overpowering for such a light grain bill and hop schedule. It would be worth a try I think (even if you brewed the lager and only fermented 1gallon with the Trappist yeast). I say go for it, but I love to experiment by subbing in Belgian yeasts in for...
