    Troeg's Mad Elf

Sorry, almost two months since I brewed. I just bottled it a few days ago. I think you'll be able to make it, especially if you're kegging. Another reason I took so long was I moved it to a third fermentor to clear more of the fruit particles out before bottling. I used a shorter primary, just...

    Troeg's Mad Elf

It was a week short of two months when I tasted it, but it could have been sooner. I kind of forgot about it in the basement..

Thanks for the input on carbonation. I had a taste of my batch yesterday and all the rocket fuel taste is gone and it is dangerously smooth. Ready for the snow now.

What level of carbonation are you guys shooting for? I'm planning on bottling (and sampling!) in a few days.

Christmas Ale Yeast WLP500 or WLP545

I made a Mad Elf inspired batch with WLP500 and now am a little worried that it has too much banana flavor from the yeast. I read in another thread that they use WLP530, the Westmalle strain, for Mad Elf but WLP530 might be a good option also.

    Troeg's Mad Elf

Usually when I make my raspberry ale, I thaw the frozen berries and then heat to just below boing for a few minutes with a little water if necessary. But, for this batch I was in a rush and used the excuse that it had enough alcohol that it would be fine. I've never seen anything definitive that...

    Troeg's Mad Elf

seckett, I just pitted and froze the fruit overnight. I forgot to mention that I've never tried the original brew, but it sounds tasty!

    Troeg's Mad Elf

I brewed a batch inspired (basically copied) from Oldsock's recipe about a month ago. I couldn't get my hands on fresh sweet cherries to go with my sour cherries, so I subbed in some fresh sweet plums. This was my first batch at such a high gravity using BIAB and didn't hit my target gravity of...

Belgian Wit with Chamomile, Lavender and Lemon Balm Leaf

Nice! I've been wondering what to do with some fresh lavender that I have. I'll have to throw a little I the next wit I do. Skål!

    Sea Rocket and chili beer

That could be interesting...maybe in a saison? It has a mustard flavor, right?
