    Brett Dregs - Starter. What did I do wrong?

    I used an airlock when I stepped up bottle dregs and didn't have any issues. And like others have said, my first starters volume was smaller and I believe lower gravity as well

    Thank you OP for a wonderful recipe, I entered my sour variation of this (using jp weizen bam bottle dregs) into the wisconsin state fair amateur homebrew competition under category 28b and got a first place ribbon and scored 37.5. Though, I was the only entry in category 28.

    I'd bet that its done fermenting, I've fermented that cool before without issue. I would move it to a warmer room and dry hop though

    Hydrometer: the best of the best

    This sounds like an exaggeration, my wine thief allows little clearance for the hydrometer inside it and my readings dont seem off at all. I spin the hydrometer and let it settle down a couple times and it consistently goes to the same number

    Yeah they have been fermenting for three weeks tomorrow, at 80-85F, will be taking them out of the chamber to let them age at room temp for several months. I dont plan on doing any type of secondary.
