    Man this beer turned out good. I'd be hard pressed to tell the difference in a blind test against Fraziskaner. It's definitely on my list for brewing again.

    BIAB question

    I do use it for 5 gal batches and it's a pretty close fit for higher og batches. I've had to do 1-1.5 gal sparges 1.056 and above, which still isn't a very big beer. But, having to sparge kinda defeats the purpose of biab. I'm in the market for a bigger kettle, but will keep brewing until I get one.

    BIAB question

    Or more since biab is usually a full volume mash. Higher gravity recipes you'll probably need more than 7 since you'll have more grain which will absorb more water. I have a 9 gal kettle and have been pushed to the rim on a couple brews.

    5 gal of Edwort's Bee Cave hefeweizen. One week in and there's no sign of the krausen ever dropping. Smells great!

    Just pitched the yeast for my first batch of this after a brewday where everything seemed to go wrong. Hopefully I'll add a pic in a few weeks.

    It might just work out. I used my wife's candy thermometer when heating my mash temp back up. After the boil my og was right on at 1.052. If it ferments well I might have to do this every time. The thermometer seems to be a lost cause. It starts out reading right, but keeps gaining temperature...

    Sweet, thanks for the reassurance. I guess as long as I don't drop a carboy on my foot and end up in the er, tonight might not be a failure.
