    Best References for Building Recipes

So I've brewed several batches, the last few being all-grain, and I'm wanting to get into formulating my own recipes. Unfortunately, I just don't have the confidence or knowledge about grain types, hop varieties, etc, to do this well. I was considering buying "Designing Great Beers" by Ray...

Cold Weather Beer - Need Ideas!

Wow, thanks for taking the time to write all that. I only have a few all-grain's under my belt so I'm not quite comfortable making up recipes on the fly yet, but that's the part I'm most looking forward to. Will definitely try something along these lines. Thanks again!

Cold Weather Beer - Need Ideas!

imperial amber sounds interesting...at the same time, i'm not sure i'm looking to go for a BIG beer. my kegerator is empty currently and would like something with a fairly quick turn-around just to get something back on tap, then go for a bigger brew...i will look into that style though. any...

Strong Alcohol Flavor - will it go away in the keg?

I brewed a Black IPA extract kit from northern brewer...primaried for a little under 4 weeks then transferred to the keg and chilled to carb up. It's been in there almost a week and has a very strong alcohol flavor. OG was 1.075. Will it mellow and age even though its cold? Should I warm it up...

Advice for Coffee Stout coffee addition

For mine, I just let the coffee steep overnight in the fridge, then pressed it into a pot. I then added the priming sugar directly to the coffee and boiled for ~5 minutes to sanitize (just used the coffee instead of water here). This does change the flavor of the coffee a bit, so you might...

need help with first all grain attempt

thanks for all the replies....I think I've got it now. Efficiency is definitely my main concern....I have some extra light DME on hand...if I take a pre-boil gravity reading and it's really low, do I just add the DME then?

need help with first all grain attempt

OK, so this weekend we will be brewing our first all grain batch. it's a pale ale kit from northern brewer and looks like this: 10lbs Rahr 2-row 0.75lbs Briess Caramel 60 0.75 oz Chinook (45min) 0.75 oz German Perle (20min) 2 oz Cascade (0min) Safale US-05 It calls for a Sacch'...

    First AG...mash tun efficiency question

So, here I am, 5 extract batches in and I am dying to start doing all-grain. I have everything I need but have a question regarding my home-made mash tun. I made it out of a rectangular cooler using a ball valve and my "filter" system is made of the stainless steel mesh tube from a water...

    Splashing?

don't pour it out...it will probably be fine. i've never had a problem, so i'm just going off what i've heard from others, but my guess is, as with everything else in homebrewing, it'll probably be fine. and don't dump.

    Splashing?

over time will degrade the taste of the beer. ends up tasting like wet cardboard. mmmmm

Advice for Coffee Stout coffee addition

i was worried about sanitation too. what i ended up doing was boiling some cold-brewed coffee to see how it changed the flavor. i liked the outcome -- a little more roasty than before boiling, but not a huge difference, so i ended up dissolving my priming sugar in about 8 cups of coffee on...
