    First time using Brett

So this will be my first time using Brett. I picked up a pack of wyeast Brett b, and my plan was to use it on a tripel that has been bulk aging since April and a saison that I brewed about a month ago. I was going to do a gallon of each in glass jugs. The tripel started at 1.090 (I added 2#’s...

Is 5 oz of Hops in a Saison too Much?

I am brewing a saison right now. Trying to figure out my hop schedule. The original plan was: 1 oz Hallertau (4.7%) @ 60 1 oz Styrian Golding & 1 oz Czech Saaz @ 15 1 oz Styrian & 1 oz Saaz @ 2ish Do you think that is too much hops for the beer. Should I cut back on some of the late...

    Simcoe/Zythos IPA Hop Schedule

I plan on brewing an IPA in a few days and I'd like some recommendations on the hop schedule. I have 10 ounces of hops to play with - 4 oz of zythos, 3 oz of simcoe, 2 oz cascade, and 1 oz galena. It will be a partial mash with a half boil. Something like 6 lbs 2 row 8 oz red wheat malt...

Imperial rye stout - recipe critique

Thanks for the advice. I have a pound of wheat dme sitting around so I figured I just toss it in there. I might cut down on some of the roasted malts so it isn't too overpowering.

Imperial rye stout - recipe critique

Here is a partial mash recipe I'm trying to put together for an imperial stout. It will be my first imperial stout, so I just want some critiques. I'm guessing that I'll get around 65% efficiency. 4# - 2 row 1.5# - chocolate rye malt .75# - chocolate malt .75# - roasted barley .5# -...

Secondaried in two seperate carboys and only beer from one of the carboys carbed up

So I made and IPA with an OG of 1.080ish. It fermented fine. I used Wyeast 1272. After fermentation, I split the batch into two separate 3 gallon carboys to try different dry hops. Only the bottles from one carboy have carbonation. They have been in the bottles for close to two months now...

I just got two new 3 gallon carboys. I have a dead guy clone that has been sitting for a while. I want ot split the batch into the 2 carboys and experiment a little. I'll leave one the way it is and probably dry hop the other or try something else that you guys recommend. I don't have...

    Warrior/Chinook/Columbus/Simcoe Recipe critique

I am trying to put together an IPA recipe with warrior, chinook, columbus, and simcoe. I'm getting 2 ounces of each. Was thinking something along the lines of this: 4# Light DME 3# Light DME as a late addition 2# of either corn sugar or honey - probably half of it as a late addition 8...

First Partial Mash Attempt - Recipe Critique

So I am going to give this whole partial mash thing a shot. I get how to do it. I'm just not sure about the recipe I put together. I want to do an oatmeal stout. I might have went a little overboard with the grains. I'm still new at this, so I'm just winiging it Mash these: 2# - 2 row...

Splitting a batch into two different secondaries. Too much head space??

I want to start experimenting with different variables in a beer to see how single changes affect the outcome of the beer, so I can know how certain things taste. Like using different yeasts or repeating a recipe but changing one thing like a different steeping grain or the hops. I brewed...

    Dry hopping in a primary.

How long do you recommend to leave it on the oak? It came with two pretty decent size spirals. The kit said anywhere from 3-7 days

    Dry hopping in a primary.

When I added the hops it was somewhere in the 1.020's range. I forget exactly. Haven't checked it since then. The expected was supposed to be somewhere around there. So I feel like it is probably pretty close to done fermenting. I need to check it again. The dry hops have been in for about...

    Dry hopping in a primary.

Say you want to let the beer sit for longer after you dry hop. Could you just take the hop bag out or even transfer it? Would that have any ill effects on the outcome? I've been reading a lot of posts lately about letting it sit for long periods of time. I feel like I dry hopped too early...
