    Have you tested your hydrometer in plain water to make sure that it reads 1.000? Your og reading seems almost impossibly low if you followed the steps as stated.

    This is pretty much exactly what I had in mind. Someone is trying to get rid of this wine fridge for $20 which is why I'm interested in it. I was also thinking that the higher temperature settings required for wine storage might mean I could skip on the Temperature Controller.

    Yeah that's exactly what I'm trying to counteract. The ambient temp in my fermentation closet right now is ~65° and the two batches of beer I've got going right now are clocking in at around 10°-12° above that. I've thrown together a swamp cooler to take care of it for now but moving forward...

    Yeah, that's basically what I've been thinking to myself too. The silicone is food safe and temp resistant up to 300 degrees (yada, yada, ect) but after dumping this much time into this I'm pretty much spent and I'm assuming that sealing it up is going to end up just being a temporary band aid...
