I forgot to post the results of this experiment. It ended up being a weird sour banana tasting beer. I would guess this is what the beer in the story 1984 would have tasted like.
Having brewed some questionable stuff I would let it run its course through most of its primary brewing then find a high tolerance yeast like the above mentioned or as I have used Ec-1118 which has a tolerance up to 18%. That is assuming you have more sugar than the current yeast can survive...
Update, Added a teaspoon of Years nutrient and the leftover hops sludge from the bottom of the pot of my White House Honey Porter 1 gallon kit. The experiment continues.
The fermentation seems to be slowing... used a stainless steel pumice stone and some bottled medical grade oxygen I got years ago at a garage sale for free to gas it a little... The experiment continues!!!
Well I did a test bottle early... its drinkable... Little funky though. I may need to add some sugar to it since it was supposed to be a 2 gallon brew and my carboy is 3 gallons. It has a weird sour taste to it.
AND SO IT BEGINS. I did ad half a bag of dark brown sugar and not having too much faith in the packet of yeast I added a packet of Lalvin EC-1118 (its days says 2/2021) and a packet of Lalvin K1-V1116 (its best by was 03-2012) Because why not.
I like darker beers. The last thing I made was some Mead from probably 20 year old honey. Heres a pick on my instagram. A lot of the honey had crystalized and it had turned black black. I did end up adding some newer honey to it get the proportions right. Its a fairly Dark brown color...
So heres the set up. I have a vintage best by 2014 Mr. Beer American Pilsner extract can. I am gonna brew it but I don't really like Pilsners so my question is. What should I try to add to it to make it more of a dark beer or stout??? Are there any extracts ingredients for Dunkels or Wiess...
Howdy Just joined. I have been brewing on and off randomly for probably 15 years. Thinking about getting back into it so though I'd join up and try some stuff out.
