    Ferment Fridge at 55 degrees... this ok?

    Yes it's taped to the side of the carboy with tape and bubble wrap. Not sure how precise it is (assuming within 2 degrees).

    This was air temp. Got a A19 temp regulator and i'm right in the 60-63 temp range. When to up with the temperature? Going to ferment around 3 weeks. At day 4 now.

    I do but it's currently being used on another carboy. I have the water about 3/4's of the way up on the carboy. Water temp is right in the 62-64 degree range.

    That's a great idea but doesn't help me at the moment. I have a thermo but don't want to remove the airlock to take reading.

    American Wheat - SG 1.136???

    I'm closer to 3.5 gallons of added distilled putting me at 5 gallons total. That's 1.040 which is slightly below the 1.049 that is shown on the instructions. What does that equate to in the beer itself? Slightly watered down?

    Sample was 75. Hydrometer. Did not check it before top off. I tested a few times and got the same. Let the bubbles dissolve. Not sure why it was so high. Followed instructions to a T.
