Wyeast 1084 (Irish Ale) - 2nd generation = Big attenuation?

I have had the exact thing happen to me with this strain of yeast and I should have thrown it away. I kept reusing it to build starters and in my case it was the start of a bad string of infections. By the time I figured it out, I was getting sour beers in 2 weeks. I'm not saying that this is...

Will 1056 work or a german ale?

I have used k-97 before as a dry yeast for an Altbier but I still preferred WLP036. Another decent choice for me is WY2112 or wLP810.

    Yeast harvest question.

Both of those pictures were over a day old setting in my basement at 40F.

    Yeast harvest question.

My first dump was two days in while it was actively fermenting, same color as this time. I forgot that I had a picture of the first dump. It kept a thick layer of krausen and kept fermenting until I dumped it.

    Yeast harvest question.

I brewed a schwarzbier recipe that I have done before and used a fermenter that I made from a half bbl keg. I have a 4” to 2” cone on the bottom for trub and yeast collection. I used Hothead yeast as I did before and did an initial trub dump at 2 days. I let it finish fermenting and went to...

How much do you pay for a CO2 tank? Refill?

for me 20lb exchanges are only a couple bucks more than 5lb. I have a hose to fill my 5lb from my 20 lb tanks.

How much hops and grain do you have on hand?

For me, usually at least 100lbs base malt, probably 30-40 lbs of specialty grains, and 15-20 lbs of hops.

Looking to Buy RO Water System...

Buckeye Hydro, 3 stage (I don’t need a chloramine stage for my municipal water), 100gpd. It takes my water from 340 to about 10 according to the tds meter I bought with it. I do 10-15 gallon batches and just put water into pet carboys a day or so before I brew. Am glad I bought it.

    Brewer's Best Russian Imperial Stout

Honestly it's too mellow now. Not saying it's bad, but it's so smooth now you can't tell there was bourbon added. I could use some help emptying the final bombers of this stout plus a couple others.........

    Brewer's Best Russian Imperial Stout

That was my second brew. I added oak chips soaked in bourbon, and vanilla beans. That was a year and a half ago and I still have some in bottles, it's a good brew.

Who do you order your beer kits from?

WindRiver has really good extract kits for a good price.

Jumping from 5 gallon to 10 gallon batches

I ended up buying a 20 gallon Spike kettle and I do BIAB in it using a 5500w electric element. I can't give you the cost of any of the work because I built it all myself. I absolutely love doing it this way. It takes about an hour longer to do 10 gallons than it used to do 5 gallons in my old...

Odd question using wlp099 in English Mild

I chickened out on using the wlp099, the starter was still going too strong for me to interrupt it.

Odd question using wlp099 in English Mild

I have a yeast starter going to hopefully save a big stout that's stuck. I am planning an English Dark Mild brew on Sunday for a 15 gallon batch (3-5 gallon fermenters using a different yeast on each) that I'm contemplating on extending to a 20 gallon using Wlp099 on the 4th fermenter. White...

    Brewer's Best double IPA

I did not dry hop that kit, it was one of my first brews and it did not call for a dry hop. I did brew the BB Imperial Pale Ale and I did dry hop it with great results. My advice to you is grab some extra hops, and do a dry hop in primary after about 2 weeks then bottle after another week. I...
