    15 gallon boil kettle too much surface area for small batches?

    No reason to only boil 3 gallons if you have this kettle. Do a full boil, no top up water. You will get better hop utilization too.

    Seems a little sweet still. any thoughts on amalyse enzyme? If I added just a little, would it drop it just a little, or would it go crazy and drop it like crazy, and dry it out way too much?

    Wyeast Belgian 3724 yeast ???

    I used that yeast and brought it up to 90°. It still stopped at 1.035. I just left it sit at around 70° and it continued on by itself.

    i get them at a brew pub. they buy them in pallet sized bags, and let me buy at cost. Homebrew club perks! Plus, i get 10 % off at a lhbs opened by a member of the club.

    my last couple batches cost me $13, and 18$ for 5.5 gal batches. I get my 2 row for $.50 a pound, and wheat for $.55 lb. Also I used harvested and washed yeast, so I had no cost in that. Most of my money in a batch is in the hops.

    I suppose you could try sandwiching the lid with two magnets. That might work.
