What is the plan with this pic? are all those going into barrel? dont know much about what this is showing me. Love to know.

Yes, I put all the everclear and 7 and a half bottles of bourbon into the barrel plus a little bit of maple syrup. The everclear raised the proof to about 125 so that it will extract more flavors from the oak. After a year or so, I'll empty the barrel, dilute the bourbon back to 80-90 proof and then age some beer (porter or stout) in the bourbon barrel.

I wonder what the evaporation rate is going to be after a year. I remember going through the Wild Turkey tour in Kentucky, that they lose up to 1/3 of the barrel to evaporation during their aging, but that's a lot longer than your one year. They said that even though 1/3 of the barrel may be gone, they have to pay the taxes on a full barrel's worth. Death and taxes...

During the first month the oak soaked up a lot more than I anticipated plus evaporation so I already dumped the half bottle in to top it off. I tasted it then too and the oak flavor was definitely noticeable and it was pretty good once I added a little water. I'll check it soon to see how far it is down again. Also, I think I may go with a Strong Scotch Ale instead of a porter or stout.

I don't remember which site exactly but there are many. Mine is '5gal, medium toast char, american oak' (google it)
