Question: How much yeast for four gallons? I usually use one packet period.

Im making a batch of fruit wine and here is my current reading. Been brewing for about four days now. Want it to get around 1.04ish before racking to carboys.

What did it start at? At your current SG assuming a dry finish at an FG of .996 you'll get 10% or so ABV.
One packet will do 6 gallons if used properly. However I recently beat my yeast almost to death. Too high an SG, too much acid, and/or too much sulfite can all impact your yeast's ability to procreate and build a healthy colony.
 
One 5g packet for up to 5 gallons, anything under 3 gallons and I’d still use half the pack. From what I’ve read, A lot of what’s in there can be yeast that’s already dead, and it’s prob not evenly mixed through the whole packet.
